Our Mission

Regenerative Farming, Honest Butchery

At Lamb & Veal, we believe that great meat starts with healthy land and happy animals. Our farm operates on the principles of regenerative agriculture — using high-density rotational grazing to build soil health, sequester carbon, and produce pastures that grow richer with every season.

Our heritage breed sheep graze freely on diverse grasses, developing the deep, complex flavor that conventional feedlot lamb cannot replicate. Our veal calves are raised in spacious group-housed pens with room to move, socialize, and rest comfortably — never tethered, never confined.

We hold Animal Welfare Approved and USDA Organic certifications because these standards reflect how we actually farm, not because they are marketing advantages.
