How do you ship fresh meat?
Every order is vacuum-sealed in Cryovac packaging, flash-frozen at peak freshness, packed with dry ice, and shipped via FedEx Cold Chain for overnight delivery. Your meat arrives within 24 hours of leaving our facility — guaranteed.
How is the meat aged?
Our lamb is dry-aged for optimal tenderness and flavor concentration. Veal is wet-aged in vacuum-sealed packaging to preserve its delicate texture. Both methods are carefully timed by our master butcher for the best eating experience.
What is the best way to thaw your meat?
For best results, transfer your vacuum-sealed meat from the freezer to the refrigerator 24-48 hours before cooking. For a faster thaw, submerge the sealed package in cold water for 1-2 hours, changing the water every 30 minutes. Never thaw at room temperature or in warm water.
